



Los Regalos (Honey)
High in the mist-shrouded peaks of Matagalpa, Nicaragua, lies Les Nubes, aptly named "The Clouds." It is here that the Los Regalos farm produces coffee nurtured by constant moisture and cool highland temperatures, allowing the cherries to ripen slowly and develop deep complexity.
This lot is prepared using the Honey Process, a delicate middle ground between washed and natural methods. The skin of the cherry is removed, but the sticky, sugary mucilage (the "honey") is left on the bean while it dries on raised beds. This allows for a controlled fermentation that boosts sweetness and body without losing clarity.
The profile is sweet, balanced, and creamy with notes of papaya, plum and longan.
It is a true "gift" from the Nicaraguan highlands, a cup that perfectly captures the lush, ethereal terroir of the Matagalpa cloud forests.
