Tolima

At the renowned El Vergel estate in Tolima, the Bayter brothers demonstrate their mastery of the classics. While they are famous for wild experimentation, this Washed process coffee is a tribute to the clarity and elegance that high-altitude Colombian beans can achieve when handled with absolute precision.

By utilizing the Washed method, the fruit is removed from the bean immediately after harvest. The beans are then fermented and rinsed in pure mountain water, stripping away the pulp to reveal the "naked" profile of the seed and the volcanic soil it grew in.

The profile is bright, crisp, and incredibly clean with notes of mandarin, brown sugar and red plum.
