High in the mist-shrouded Gayo Highlands of Central Aceh, the farmers of Gegarang Village are blending ancient Sumatran tradition with a bold new technique. This coffee is an exploration of texture and aroma, shaped by the very timber of the land.
The Wooden Barrel process is a unique anaerobic fermentation. After harvest, the coffee cherries are placed into sealed wooden barrels, allowing them to ferment in a controlled, oxygen-free environment. The wood acts as a natural insulator and imparts a subtle, rustic complexity that interacts with the coffee's natural sugars, creating a flavor profile unlike any other.
The profile is deep, mysterious, and incredibly smooth with notes of black olive, starfruit and molasses.
It is a soulful cup that captures the earthy essence of Indonesia, refined through a process that feels both artisanal and avant-garde.
